
There is no better way to warm up a cold snowy day than serving up some homemade creamy Potato Broccoli Cheese Soup. I love to "Tweak" recipes to make them my own, using ingredients my family loves. I took a basic potato soup recipe and added in some cheese, broccoli, & carrots. The Hubby says this is, hands down, 'His Favorite Soup'. The Grand Kids love it too, so, it is definitely a keeper. I hope 'Your Family' enjoys this Hearty Soup as much as my family does. Here's Your Recipe:
Donnie’s Potato Broccoli Cheese Soup
3 (14 oz) cans chicken broth
1 Tbsp butter
1 tsp salt
1/8 tsp (each): black pepper, garlic powder, onion powder
1 (10 oz) bag ‘steamable’ broccoli cuts
1 (28 oz) bag Frozen Oreida O’Brien potatoes (with peppers/onions)
2 (1.3 oz) pkgs white gravy mix
½ lb white American cheese
½ cup water
1 cup canned carrots (drained & chopped)
1 cup milk
Make It:
Pour chicken broth into a large saucepan. Add butter and seasonings to broth. Set temperature to medium- high – when broth comes to boil – turn heat down to a ‘simmer’. Microwave broccoli in bag according to package directions – remove and set aside. Empty frozen potatoes into a large glass bowl - cover with lid – microwave approximately 20 minutes or until potatoes are tender - stir occasionally – remove from microwave & set aside. In medium size bowl, combine 2 pkgs white gravy mix with ½ cup water – whisk until well blended – set aside. Cut block of American cheese into cubes. Drain and chop steamed broccoli. Chop cooked carrots. Ready to assemble: Add cubed cheese, gravy mixture, and milk to hot broth – simmer & stir until cheese melts and broth has thickened. Add cooked potatoes, broccoli, and carrots to thick broth. Continue to simmer 10 – 15 minutes or until well heated. Yield: 6 – 8 servings.
