6 – 8 lasagna noodles – (pre-cooked)
1 lb ground beef
1 Tbsp dried minced onion
1 Tbsp dried Italian seasoning
1 tsp refrigerated minced garlic
½ tsp salt
1/8 tsp black pepper
2 (14 oz) cans beef broth
1 (14 oz) can petite diced tomatoes (undrained)
1 (14 oz) can crushed tomatoes
2 cups shredded mozzarella cheese
½ cup grated Parmesan cheese
Seasoned Croutons (optional)
How Mama Makes It:
Pre-cook lasagna noodles by package directions; drain and cut into bite size pieces; place in single layer onto sheet of oil-sprayed parchment paper to keep from sticking to each other; cover with second sheet of parchment or waxed paper; set aside. Cook ground beef in skillet until done; drain fat from meat. Add meat to soup pot. Combine all seasonings together then stir into meat. Add broth and both tomatoes to pot; bring to a simmer and cook about 6 - 8 minutes. Add cooked lasagna noodle pieces to pot – continue to simmer another 6 – 8 minutes. Mix cheeses together and sprinkle over top of soup once ladled into bowl. Top with croutons, if desired, or, serve with grilled Texas toast. Serve with a nice fresh green salad for a delightful meal.
(Note): 2 cups ‘cooked’ macaroni noodles may be substituted for lasagna noodles.
